Peter T Dutton, Managing Director

British, with Caymanian Status, Peter qualified as a Chartered Accountant in 1978. After working with an international firm of accountants in London and Miami, he joined the Group as Financial Controller in 1983. He was appointed to the Board in 1984 with responsibility for all financial matters and also oversees business development. He has made a major contribution to the development of the Company’s wine business. He was appointed Joint Managing Director in 1999 and substantive Managing Director in January 2001.

Nicholas Ward, Finance Director

Qualified as a Chartered Accountant in South Africa in 1987 and has both public and private sector accounting experience at a senior level. He was appointed as Finance Director of a major South African shipping group in 1995 and joined the Jacques Scott Group on the 1st of May 2002.

A US Citizen. Educated in New York. Entered the foodservice industry (purchasing) in New York and now has 30 years experience within the industry. Upon relocating to Florida in 1971, helped start equipment and supply division of Henry Lee Co, and developed their export business in the Caribbean. Began supplying customers in the Cayman Islands in 1972. Founded Island Supply Co Ltd. in 1987 and acted as President of the company up to its merger with Jacques Scott Group Ltd. in 1999.

Joined Island Supply Co Ltd. upon receiving his Bachelor’s Degree in Accounting and, over the past seven years, has been instrumental in the growth and development of Island Supply Co Ltd’s purchasing office in Coral Springs, Florida. His responsibilities include purchasing, sourcing new products and vendors and developing sales in territories outside the Cayman Islands.

Findlay Wilson, Sales & Marketing Manager (Liquor and Beer)

Originally from Scotland, Fin has been resident in Cayman since 1995. He spent ten years in hospitality before taking the reins in the family business, Ye Old English Bakery. He then joined Jacques Scott and spent four years as the Heineken Brand Manager before becoming Sales Manager (Beer & Spirits) in August 2009. Fin is a very experienced professional and has successfully created a strong customer base particularly in the local bars which are considered key to the success of the Group’s brands in Cayman.

Chris Weaver, Service Manager, Island Supply Co Ltd.

A UK Citizen with Caymanian Status. Chris began his career in the hotel and restaurant industry in the UK before taking up a position as Assistant Restaurant & Banquets Manager in Grand Cayman in 1987. He continued working in Cayman’s restaurant industry for the next ten years culminating in owning and operating his own restaurant before joining Island Supply in April 1997. Spent five years in sales and, with his intimate knowledge of the restaurant industry, was instrumental in growing the on-island business before leading the Cayman Sales Office in 2003.  Since 2014, he has built up a successful new Service Department which continues to grow.

Lee Royle, Marketing Manager (Wine)

A UK citizen originally from Manchester, Lee has travelled to many parts of the globe.  He has extensive experience in the hospitality trade and while living in Canada gained his Sommelier certification through the International Sommelier Guild. Lee joined the Group in 2008 working for our Retail Division where he was instrumental in promoting our wine portfolio through in-store tastings and various media outlets.  Lee now manages our Wholesale Wine Team coordinating marketing and sales for our extensive wine portfolio which is certainly the largest on island and perhaps in the entire Caribbean.

A citizen of Mexico who spent seven years in Canada before taking up residence in Cayman in 1990.  Sergio had extensive restaurant experience both in Cayman and Canada before joining the Wine Team. Sergio (the “Matador” ) is passionate about bullfighting and fine wines.

Alain Ayala-Swaby, Operations Manager

Originally from Cuba, Alain holds Caymanian Status. Alain has worked in wholesale operations in Cayman since 1991, from delivery and warehouse, to sales, marketing and general management.  He joined the company in 2008 as Assistant Operations Manager and on the retirement of C Bothwell, was promoted to Operations Manager in October 2011.  He is responsible for the management of the Group’s warehouse and delivery functions, together with the security and maintenance of the Group’s buildings and fleet.

Mark Schofield, Security and Risk Manager

Educated in the United Kingdom, Mark has resided in the Cayman islands for 21 yrs.  He joined Jacques Scott Group in 2015 and brings with him over 26 years of law enforcement experience. As the Security and Risk Manager, Mark is responsible for maintaining  a safe and secure environment for our customers and employees at all the Groups locations.

Charles Mottley, Food Division Manager

Charles is Trinidadian with an academic background in economics.   He has spent much of his professional life working throughout the Caribbean and Latin America with multinationals.  He has over 25 years’ experience in the FMCG industry building brands and businesses at a senior level and joined the Group in 2015.

Ross Chernin, Manager, Retail Operations Division – Duty Paid

Originally from Boston with a background in business consulting, Ross caught the wine bug while working for a startup in London.  After completing his Level 3 WSET Award in Wine & Spirits, Ross began his new career and hasn’t looked back.  Ross joined the Group in 2014 working with the Wholesale Wine Team with a focus on elevating the portfolio through off-premise sales.  In 2016 he made the transition out of wholesale and into retail.

Edith Veleris, Manager, Retail Operations Division – Duty Free

Caymanian.  After working for Westar TV Limited as Book Keeper/Office Manager, Edith joined the Group in 1996 as Assistant Store Manager.  She was promoted to Senior Store Manager of the Group’s flagship store in 1997, completing the Wine & Spirits Education Program course in 1998.  Her strong record in internal controls and procedures and attention to detail led her to the new position of Retail Division Auditor in 2001 with inventory responsibility for all the Group’s stores.  In 2016 she was appointed Retail Operations Manager (Duty Free) combining her existing role with overall responsibility for the Group’s airport store.
