Champagne Tiramisu

Makes 6 servings

Ingredients:

  • 1 ½ cups Bollinger Special Cuvee
  • 20 Ladyfingers
  • 4 egg yolks
  • 1 cup mascarpone cheese
  • ¼ cup heavy cream
  • 1 cup confectioner’s sugar
  • 1 TBSP granulated sugar
  • 1 tsp vanilla extract
  • 2 tsp cocoa powder (for dusting)

Instructions:

  1. Spread the Ladyfingers in a baking pan and pour the Bollinger’s on them and let the champagne soak into the cookies.
  2. In a mixing bowl or stand mixer bowl, combine the egg yolks, confectioner’s sugar, and vanilla extract. Mix with a hand or stand mixer until the texture fluffs.
  3. Add the mascarpone cheese and mix thoroughly on high.
  4. In a separate bowl, combine the cream and granulated sugar and whisk until you get stiff peaks of whipping cream. 
  5. Fold in the whipping cream to the mascarpone mixture, a bit at a time.
  6. Compose the tiramisu by layering first a champagne-soaked Ladyfinger, followed by a cream layer, until your serving cup holds a total of four layers.
  7. Dust with a light spread of cocoa powder.
