Portobello Penne Pasta Casserole

Prep Time: 15 min; Cook Time: 30 min; Total Time: 45 min

Makes 8 servings.

Ingredients:

  • 8 oz. uncooked penne pasta
  • 2 TBSP vegetable oil
  • 8 oz. portobello mushrooms (sliced thin)
  • ½ cup margarine
  • ¼ cup all-purpose flour
  • ½ tsp minced garlic
  • ½ tsp basil
  • 2 cups milk
  • 2 cups mozzarella cheese (shredded)
  • 1 pack of frozen spinach (thawed)
  • ⅓ cup Worcester sauce

Instructions:

  1. Preheat the oven to 350°F.
  2. Prepare a baking dish (9”x13”) by spraying with cooking spray. 
  3. Fill a large pot with water and salt well. Bring to a boil.
  4. Cook the penne pasta until al dente (8-10 minutes).
  5. Drain the pasta.
  6. While the pasta cooks, heat the oil in a saucepan on medium heat. 
  7. Saute the mushrooms for about one minute. Set to the side.
  8. Melt the margarine in the same saucepan.
  9. Mix in the flour, garlic, and basil. Cook for about one minute.
  10. Gradually add the milk, stirring until the mixture thickens.
  11. Stir in ½ of the cheese until it melts.
  12. Add the cooked and drained pasta, the mushrooms, spinach, and Worcester sauce.
  13. Mix together and pour into the baking dish.
  14. Top with the other cup of mozzarella.
  15. Bake for 20 minutes until lightly browned on the top.

 

Chocolate Mousse

Prep Time: 20 min; Total Time: 20 min

Makes 8 servings.

Ingredients:

  • 6 eggs
  • 10 oz. dark cooking chocolate
  • ¾ cup of butter
  • 1 cup cream
  • 6 TBSP caster sugar

Instructions:

  1. Separate the egg whites into a larger bowl and the yolks into a smaller one.
  2. Whisk the yolks well.
  3. Melt the chocolate in the microwave at 30-second intervals, stirring before setting for another 30 seconds. Set aside to cool once smooth.
  4. Beat the cream until peaks form.
  5. Add the sugar to the egg whites. Beat until peaks form.
  6. Fold the yolks into the cream via spatula. Do not overwork.
  7. Make sure the chocolate is still warm and runny. Can reheat at 5 second intervals if necessary. Fold the chocolate into the yolk and cream mixture. Do not overwork.
  8. Add ¼ of the beaten egg whites to the yolk, cream, and chocolate mixture. Fold together, using the spatula to smush the lumps. 
  9. Add the chocolate mixture to the rest of the egg whites. Fold until fully incorporated with no white showing.
  10. Divide the result into 8 serving bowls and refrigerate for at least 7 hours.
  11. Garnish with raspberries, a sprig of mint, additional whipped cream, or chocolate shavings.
