Jamaican Sorrel

Prep Time: 10 min; Cook Time: 10 min; Rest Time: 4 hours

Makes 16 servings

Ingredients:

  • 1 gallon of water
  • 3 ½ oz. dried sorrel
  • 2 cups fresh ginger (slicked)
  • 1 orange peel
  • 2 cinnamon sticks
  • 5 pimento berries
  • 5 whole cloves
  • 1 cup rich simple syrup (or 2 cups of sugar)
  • 1 cup dark rum (Governor’s Reserve Dark Rum)
  • 1 cup Red Label Wine

Instructions:

  1. Boil the water in a large pot.
  2. Add the sorrel, ginger, orange rind, cinnamon sticks, pimento berries, and cloves. Stir well. 
  3. While hot, add the sugar and stir, or if you’re using simple syrup, let the pot cool and then add the sweetener.
  4. Allow the mixture to rest for a minimum of four hours and a maximum of twelve hours (in the refrigerator).
  5. Using a mesh stranger and a large bowl or pitcher, strain the mixture and discard the solid ingredients.
  6. Add the rum and Red Label wine to the liquid. Stir.
  7. Serve chilled from a pitcher or punch bowl. 

Any leftover sorrel you have can be stored in the refrigerator in an airtight container for up to a month. If you leave out the alcohol, it will stay fresh in the refrigerator.
