Ingredients:

  • Fruit Mixture
    • 1 ¼ cup dried, pitted prunes
    • 1 cup raisins
    • 1 cup golden raisins
    • 1 cup dried cherries
    • 2 ¾ cup Red Label Wine, divided 2 ½ cups + ¼ cup
  • Cake
    • 1 cup all-purpose flour
    • 1 cup breadcrumbs
    • 1 TBSP baking powder
    • 1 tsp cinnamon
    • ¾ tsp nutmeg
    • ¼ tsp allspice
    • ¼ tsp salt
    • 2 sticks butter, softened
    • 1 ¼ cups dark brown sugar
    • 5 eggs
    • 1 TBSP lime juice
    • Lime zest
    • 1 tsp vanilla extract
    • 1 tsp almond extract
    • Prepared fruit mixture
    • 2 TBSP browning
    • 2 TBSP burned sugar

Instructions:

Fruit Mixture

  1. In an airtight container, add the prunes, raisins, golden raisins, dried cherries, and 2 ½ cups of Red Label Wine. Let rest for a minimum of five days, up to a few months. Make sure that the fruits remain covered with wine throughout the soak.
  2. On baking day, blend up the mixture until smooth.

Cake

  1. Preheat the oven to 250°.
  2. Prepare a 10” baking pan with a liner or cooking spray.
  3. In a mixing bowl, add flour, breadcrumbs, baking powder, cinnamon, nutmeg, allspice, and salt. Mix well.
  4. In a stand mixer or with a hand mixer, cream together the butter and brown sugar to a fluffy texture. (medium speed, about 4 minutes)
  5. Add the eggs to the stand mixer, one at a time, followed by lime juice and zest, and the vanilla and almond extracts. Mix until all of the ingredients are incorporated.
  6. Add the flour, little by little, mixing until combined.
  7. Fold the fruit mixture, browning, and burned sugar into the flour mixture until well mixed.
  8. Add the batter to the prepared baking pan.
  9. Bake for about 2 ½ hours, checking with a toothpick for doneness.
  10. Remove from the oven and cool for 15 minutes.
  11. Pour ¼ cup of the Red Label Wine over the finished cake and allow it to soak overnight. This cake can be stored at room temperature, covered, for a few days.
