Nipper Juice (RUM)

Ingredients:

  • 2 oz. Appleton Estate rum
  • 2 oz. pineapple juice
  • 2 oz. orange juice
  • 1 oz. cranberry juice
  • 1 splash of Cointreau
  • Cherry for garnish

Instructions:

  1. In a cocktail shaker, add all of the ingredients other than the cherry.
  2. Add ice to the shaker, shake until chilled, and strain into a highball glass.
  3. Garnish with a cherry.

Island Breeze (VODKA)

Ingredients:

  • 2 oz. Smirnoff or Ketel One Vodka
  • 6 oz. pineapple juice
  • Splash of cranberry juice
  • Cherry and pineapple wedge for garnish.

Instructions:

  1. In a mixing glass filled with ice, add the vodka and both juices. Stir gently.
  2. Pour into a serving glass and garnish.

Big Red Sun (Scotch and Irish Whiskey)

Ingredients:

  • 1 oz. Johnnie Walker Scotch
  • 1 oz. Jameson whiskey
  • ¾ oz. passion fruit liqueur
  • 1 oz. lemon juice
  • ¼ oz. vanilla syrup
  • 2 dashes bitters
  • 1 dash apple bitters
  • Apple slice for garnish

Instructions:

  • Prepare a shaker by filling it with ice.
  • Add all of the ingredients other than the garnish.
  • Shake until chilled.
  • Double strain into a serving glass.
  • Garnish and serve.

Tropical Whiskey Tiki Sour (AMERICAN WHISKEY/BOURBON)

Ingredients:

  • 2 oz. Jack Daniels
  • ½ oz. simple syrup
  • 1 bar spoon amaretto
  • 1 bar spoon Cointreau
  • 1 oz. pineapple juice
  • ½ oz. lemon juice
  • 1 bar spoon allspice dram
  • 2 drops Bittermens “Tiki” bitters
  • Pineapple, mint, or cherry for garnish

Instructions:

  1. Mix ingredients in an iced cocktail shaker.
  2. Shake thoroughly.
  3. Strain into an iced rocks glass.
  4. Garnish as you please.

Island Daisy (COGNAC)

Ingredients:

  • 2 ½ oz. Hennessy VSOP
  • 1 oz. pineapple juice
  • 1 oz. almond syrup
  • 2 oz. lemon juice
  • Pineapple wedge for garnish

Instructions:

  1. Add all of the ingredients, except garnish, to an iced cocktail shaker.
  2. Shake until chilled
  3. Pour into an iced serving glass.
  4. Add more ice.
  5. Garnish with a pineapple wedge.

Tropical Margarita (TEQUILA)

Ingredients:

  • 4 oz. tropical fruit, cube
  • 2 oz. Patron Tequila
  • 1 ½ oz. Cointreau
  • 1 oz. lime juice
  • 1 tsp agave
  • Ice
  • ½ tsp orange blossom water
  • Lime wedge and sea salt

Instructions:

  1. In a blender, pulse all of the ingredients other than the lime wedge and salt.
  2. Rim the glass with lime and press into salt.
  3. Pour into a serving glass.
