Chardonnay Friendly Appetizers

The balanced oakiness of the Antinori Chardonnay welcomes rich and light appetizers equally. Crab cakes, mini zucchini goat cheese tarts, crab salad, and blue cheese stuffed olives are all possibilities.

Mini Zucchini Goat Cheese Tarts

Ingredients:

  • Pie crust (roll out kind, ½ of a 1 pound package)
  • 8 oz. zucchini (cut into ⅛” thick slices)
  • 1 tsp salt
  • 2 TBSP olive oil (extra for drizzle)
  • 2 tsp dried thyme
  • pepper
  • 3 oz. of goat cheese (room temp)
  • ¼ cup Parmesan cheese

Instructions:

  1. Prepare a baking sheet by lining with parchment paper.
  2. Spread out the pie crust on a work surface that you’ve dusted with flour.
  3. Use a round 1 ½” cutter, dip it in flour, and cut out 2 dozen rounds.
  4. Place the rounds on the baking sheet, ½” apart.
  5. Cool in the freezer for half an hour.
  6. In a bowl, toss the salt and zucchini rounds together and rest for ¼ hour.
  7. Pat dry.
  8. Dry the bowl and toss the zucchini with the olive oil and thyme. Sprinkle pepper over the zucchini.
  9. Preheat the oven to 400°F.
  10. Spread a generous dollop of goat cheese on each of the pie crust rounds that you have waiting in the freezer.
  11. Fold the zucchini slices in half and place in a circle formation on the pie crust round.
  12. Sprinkle Parmesan over the zucchini rounds.
  13. Bake for about 20 minutes, until the crust is a light gold color.
  14. Remove to a serving plate.
  15. Drizzle with a bit more olive oil.

From roast chicken to pork loin, shrimp scampi, or any white meat in a creamy sauce, a range of dishes are well suited to Chardonnay wines.

Lemon Herb Pork Chops

Ingredients:

  • 4 boneless pork chops
  • 2 tsp minced garlic
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp thyme
  • ½ tsp rosemary
  • 1 ½ TBSP lemon juice
  • 2 tsp parsley

Instructions:

  1. Remove fat from the pork chops.
  2. Mix the seasonings in a small bowl – salt, pepper, paprika, oregano, thyme, and parsley.
  3. Place the pork chops in a large bowl and sprinkle the seasonings over the chops. Add the garlic. Toss to coat.
  4. Top with lemon juice and rest for 20 minutes.
  5. Prepare a baking sheet by lining it with foil. Spray with oil.
  6.  Preheat the oven to broil.
  7. Put the pork chops on the baking sheet and cook for about 4-5 minutes on each side.
  8. Sprinkle with parsley.
