While many Champagne houses secure grapes from an assortment of providers, Bollinger actually supplies more than ⅔ of the grapes it uses to make Champagne. They own vineyards in all of the top-rated sources:

Pinot Noir is the dominant variety with Chardonnay blended into many Bollinger cuvées for a full-bodied, sophisticated wine suitable for any important celebration.

Bollinger’s vineyards begin the magic, but the cellars are equally important to the quality of the sparkling wine production. Bollinger wines are still made in the traditional fashion, and blends are created with a plethora of reserve wines for a layered and consistent elevation.

Bollinger ages all bottles in magnum-sized bottles rather than the regular size. The theory is that this medium works better for long-term aging than casks or tanks. The Bollinger magnum bottle has a thinner neck for less space in the neck for improved aging.

These magnums are aged with a cork held by a large metal staple, in an agraffe process. This choice costs more than using a cheap metal cap, but the difference in taste is well worth the investment.
