The Primer on Cabernet Sauvignon

Cabernet Sauvignon grapes are one of the most popular and distinguishable red wine grapes in the world. They’re grown all over the world – from the Napa Valley to Bordeaux, France, Chile, South Africa, Australia, and more. The wines made from these grapes are as delicious as they are diverse.

Full-bodied, with high tannin levels and high acidity, Cabernet Sauvignon ages well. Oak barrel fermentation softens the wine and gives it balance. Common flavors for Cabs include black fruits, green bell pepper, cedar, mint, vanilla, spices, and tobacco.

The timing of grape harvesting is critical for winemakers. If the wines aren’t at the peak of ripeness, the result will be more vegetable flavored than fruity, and if allowed to become over-ripe, the wine will taste more like sweet jam than a solid wine.

Timing of wine aging matters as well. The longer you age a Cabernet Sauvignon, the stronger the notes of tobacco will be, but the wine is good either way.

Tips for Pairing Food with Cabernet Sauvignon

Red meat and dense protein like lamb and tuna are all ideal for serving with Cabernet Sauvignon. Rice and pasta dishes aren’t great with this wine because the tannins won’t be lessened by the starches. Instead, the protein needs to have fat and richness to balance the tannins.

When serving Cabernet Sauvignon, make sure that you decant at least an hour before the meal. Exposing the wine to oxygen allows the wine to expose its full flavors, and a large glass with the wine served a little cooler than room temperature allows this process to work even more.

When planning your next meal, choose a full flavor meal that goes with the full body and flavor of what Cabernet Sauvignon you choose from Jacques Scott Wines & Spirits. Allow us to put the Ridge Estate Cabernet up for your consideration!
